The aim of my study is to examine the extent to which the process of gentrification was perpetuated, accelerated or resisted through the opening of a community bakery. My essay will delve deep into this contrasting urban landscape through a micro-analysis of one particular commercial activity within this borough. Grounded in ethnographically oriented research, I will be using the example of ‘Holloway’s Model Bakery’ and critically analyse this hypothesis.
